My Peanut Butter Power Porridge Recipe

This week has flown by! I hope you’ve enjoyed the Seven Days of Me blog posts, which one was your favourite? I thought I would start as I mean to go on by posting a recipe for Friday’s entry. I’m having this delicious porridge every morning at the moment, it’s sweet, warm and filling, as well as being full of nutrients. Let me know if you make it yourself.

Peanut Butter Power Porridge

Serves One

1) Place 40g organic oats, 1/2tsp organic maca powder and 1 heaped tsp of good quality (palm oil free) peanut butter in a small saucepan.

2) Pour over 250ml of organic almond milk (I like Rude Health’s one). Stir.

3) Cook on a medium heat. It can be left alone for the first five minutes or so, but when little bubbles start to appear, stay with it and continue to stir with a wooden spoon. Keep stirring until the porridge has thickened to your desired consistency.

4) Spoon into the bowl and add flaked almonds and 1/2tbsp of honey. Dig in your spoon and enjoy.

I hope you like my first recipe on Boo Wholefoods, there will be plenty more. I’m open to taking suggestions for recipes too – which meal should I focus on? Breakfast? Lunch? Or dinner?

See you tomorrow for the announcement of the wholefoods snack giveaway winner. There’s still time to enter, just leave a comment below (UK only).
