As much as I love Coconut Banana porridge, I was getting in a bit of a rut with my breakfast choices, or should I say choice. To mix things up, I set myself the challenge of having a different breakfast every day for a whole week. I’m glad to say I completed the challenge, and I thought I would share my thoughts about it.
It was easier than I thought. At first, I thought I would struggle to come up with seven different breakfasts, but I was inspired by my ingredients to create new combinations.
The smoothies kept me full the longest. I have an apple for my morning snack, and I reached for it later on the two days I had smoothies. I wasn’t expecting this to be honest, although I do make giant smoothie, no small glasses here!
I definitely prefer sweet breakfasts. All of my breakfasts this week were packed full of sweet flavours. Maybe this would have been different if I had eggs or something in my cupboard, but I think I just generally prefer a sweet start to the day.
You can make so many options with the same ingredients. Oats, coconut yogurt and nut butter all repeated themselves throughout my week. I think this definitely helps to keep costs down whilst still enjoying variety.
I like having fruit first thing. I find eating soft fruit later in the day makes me tummy feel a bit off, so I like to get my fruity fix first thing. It’s the same with smoothies, I don’t think I will ever be the type of person to have a smoothie as a dessert, it just doesn’t agree with my digestion.I’m so glad I created this challenge to spark some creativity and shake things up.
