America’s contribution to the world is debatable, especially now Trump has dragged them out of the Paris Agreement. But on one hand, America is the land that gave us Hollywood movies, mobile phones and Marvel comics. On the other hand, it is responsible for questionable presidents, shady food production practices and cheese out of a can. However, one of the greatest American inventions, without a doubt, has to be the combination of peanut butter and jam, or “jelly” as the Yanks would say.
Of course, I’ve had many a PB+J sandwich in my time, but these days, I’m looking for slightly healthier approach. I took the key elements, added chia seeds, oats, plenty of peanut butter and made the most of strawberry season to create this breakfast. I love porridge, and it’s a great vehicle for my favourite flavour combinations.
To a small pan, add four or five quartered strawberries and 1/2tsp chia seeds. Add a decent splash of water and set on a medium heat to bubble. It’s ready when the strawberries have turned into a thick, sweet sauce.
Meanwhile, to another small pan, add 35g oats, 1tsp peanut butter, 1tsp ground flax seed, four quartered strawberries and 200ml almond milk. Cook gently on a low heat until thick.
To serve, add the porridge to the bowl, pour over the strawberry sauce, add another teaspoon of peanut butter and sprinkle over some mixed chopped nuts.
It’s my favourite thing to make indulgent dishes that are actually cheap and quick to cook. It’s amazing what you can do with a few ingredients and a bit of time. Do you like the PB+J combo?
