Halloumi, rocket and roasted vegetable salad

I get really envious about amazing dishes served up in cafes, delis and restaurants in London. They seem to have the best of the wholefood world. Bright and colourful and packed full of nutrition, I wish they were located down the road. Although, even if they were here in Bristol (we do have some excellent cafes!), I don’t have the budget to visit all the time to get the dish of the day. The easiest remedy for my envy is to get in the kitchen.

Inspired by the wholefood cafes on Instagram, I made this delicious bowlful of nourishment. Each of the compenents are crucial to making this a balanced meal, in terms of nutrients, but also flavours and textures. I could make my own falafel, I’m sure, but there’s enough prep to be doing on a Sunday without the addition of making falafal from scratch. I cheated and bought some, but it still works out cheaper than eating out.

Halloumi, rocket and roasted vegetable salad

Serves 4

Preheat the oven to 180C. In a large baking dish, add one thickly sliced courgette, one peeled and roughly chopped onion, one chopped aubergine and one de-seeded yellow pepper. Add one peeled and finely chopped garlic clove and drizzle over some rapeseed oil. Season, then roast for 40 minutes, stirring half way through.

With ten minutes to go on the veg, cook 130g brown rice pasta according to packet instructions. Heat a large griddle pan to a high heat, then griddled your halloumi slices. I used a whole pack to serve four. When everything is cooked, combine the pasta, roasted veg and halloumi together.

To serve, plate up the salad with a large handful of rocket leaves, the pasta combo, a generous amount of houmous and two falafals. I bought sweet potato falafals from Waitrose, which I happily discovered were gluten free. I would definitely recommend them. Also, I make my own houmous using a Deliciously Ella recipe, but you could use shop bought to save time. Sprinkle over a little black pepper, a few pine nuts and a few pumpkin seeds and you’re good to go.


It honestly made me happy to open up my lunch boxes to this delicious dish. It’s quite quick as far as meal prep goes, but still packed full of the good stuff. Do you like the look of this recipe?   1. This looks really satisfying! Cooking a meal like this is so much more rewarding than ordering a takeaway. There’s a cafe local to me that does couscous mixed with pomegranate, walnuts and aubergine. They give you the option to have hot smoked salmon on the side as well. I was pleasantly surprised at how content I was for the rest of the day after tucking into that!
